ARUGULA LEAVES with Golden Beet (or red, in my case), Kiwi, Radish + Orange Juice

Arugula has a very unique flavor. Some love it, some don’t. The sweetness in the kiwi and orange juice dressing help balance out the bitter/radishy flavor that twerks on your tastebuds (say what?). Some recipe posts are long with a story, but this one doesn’t need anymore explanation. Especially since I just wrote, ‘twerk’ -ash
SALAD
2 kiwis
1 large golden beet
5 radishes
1 peeled orange
2 tbsp chia seeds
8 cups arugula leaves
DRESSING
4 tbsp fresh orange juice
2 tbsp tahini
1/4 tsp sea salt
1/4 tsp black pepper
DIRECTIONS
Slice the kiwis, beet and radishes thinly on a mandolin slicer, or shred them if you prefer. Slice the orange into segments. Toss the sliced produce with the chia seeds and arugula.
To make the dressing: blend the orange juice with the other ingredients. Drizzle on the salad and enjoy!
